Chocolate & Nut Snack Bars

Adapted from a recipe in Laura Fuentes' book Clean Treats



An easy no-bake recipe for delicious snack bars. With just enough sweetness to make them feel like a real treat, these bars are packed with nutty goodness!


Prep Time: 15 minutes

Chill Time: 60 minutes (at least)

Serves: 16 bars


Ingredients

  • 110g pecans

  • 110g blanched almonds

  • 140g cashews

  • 95g coconut chips

  • 1 tsp ground cinnamon

  • 150g raisins

  • 1/2 tsp salt

  • 60g hard butter or coconut oil

  • 60g peanut butter

  • 115g maple syrup or honey

  • 1 tsp vanilla extract

  • 85g dark chocolate chips


Method

  • Line a 9 x 9 inch tin with parchment paper

  • Combine the pecans, almonds and cashews in a food processor. Cover with lid and pulse to chop the ingredients but don't overmix. Add the coconut chips towards the end

  • Transfer the mixture to a large bowl and stir in the cinnamon, salt and raisins

  • In a small saucepan, melt the butter and combine with the peanut butter and maple syrup over a low heat. Whisk until smooth and add the vanilla extract

  • Add the butter mixture to the dry ingredients and stir to fully combine, then fold in the chocolate chips

  • Transfer to the lined pan and press down in an even layer. Cover and allow to cool, then refrigerate for 1 hour or until firm

  • Remove from the pan and cut into 16 bars to serve


The bars will start to melt at room temperature so keep chilled to stay firm. Store in an airtight container for up to 2 weeks, or freeze for up to 2 months.
